1lbchicken breastsboneless skinless, diced into 1 inch cubes
1/2purple onionquartered and seperated
3ozmushroomswe used baby whites
1yellow pepper
1zucchini
4ozcherry tomatoes
4sweet baby peppers4-6 peppers, trimmed and quartered
Marinade
1/4cuplemon juicejuice from 2 fresh lemons
1/4cupolive oil
1Tbspminced garlic
1tspsalt
1/2tspblack pepper
1/4tsppaprika
Instructions
Dice and chop all ingredients into about 1-inch in size. Keeping them the same size will help everything to cook evenly.
Add to a large bowl with all of your marinade ingredients. Give a good toss so everything is coated well. Refrigerate for 30 minutes.
While marinating, soak your wooden skewers in a water bath. Cut to fit into your air fryer.
Arrange the ingredients on skewers to your liking, leaving a bit of breathing room between each ingredient on the skewer.
Work in batches so as not to crowd the air fryer. Air Fry each batch for 6 minutes on 370F.
Sprinkle with parsley and serve.
Notes
This recipe will make 8-10 skewers. Work in batches in your air fryer as to not overcrowd the basket. Soak and trim your skewers to the size of your air fryer.
